Chia Spiced Porridge w/ Salted Caramel & Chocolate Sauce

Two of my favourite things; chia spices and salted caramel in one big bowl of delicious, healthy porridge. The other thing I love about this is just how easy it is to make - simply soak the buckwheat overnight, blend and go! Who said fast food has to be unhealthy?

Ingredients

1 1/2 cups raw buckwheat groats, soaked overnight

3/4 cup almond milk

5 1/2 tbs maple syrup

1/4 tsp ground cloves

1 tsp ground cinnamon

1/4 tsp ground cardamon

1 tsp ground ginger

1 tbs tahini

1/4 tsp sea salt

1 1/4 tbs cacao powder

2 tbs coconut oil, melted

1 handful berries

1 tsp bee pollen

 

Method

Drain and rinse the buckwheat then place it in a food processor with the spices, milk and three tablespoons of the maple syrup. Blend until smooth.

Mix 1 1/2 tablespoons of the remaining syrup with the tahini and 1/8 teaspoon salt. Set aside.

Mix the coconut oil with the cacao powder and the remaining syrup and salt.

Pour the porridge in a bowl then with a spoon, swirl the caramel and chocolate through it. 

Top with berries, bee pollen or toppings of your choice.
