Again the combination of chocolate and orange… I can't get enough of it and think it adds a nice fragrance to these brownies. If it's not your thing then you can simply leave it out. These brownies are exactly what brownies should be; soft, gooey, chocolatey and very delicious. They're also so simple to make!
Chocolate Orange and Pecan Brownies
4 tablespoons nut butter, heaped
1/4 cup coconut oil, melted
3/4 cup almond meal
16 dates, pitted
3/4 teaspoon sea salt
1/2 teaspoon baking powder
1 cup cacao powder
1/3 cup maple syrup
1/4 cup pecans, crushed
Pre-heat the oven to 180C.
Place the dates in a bowl of warm water for 5 minutes.
Grate the orange's rind into a blender or food processor, crack in the eggs then add the dates, nut butter, maple syrup and coconut oil, blend until fairly smooth.
Sift the cacao powder, salt, baking powder and almond meal into a large bowl then pour in the wet mixture, add the crushed pecans and stir everything to combine.
Pour the mixture into a tray lined with baking paper, I use a 13x8 inch one, smooth it out with the back of a spoon and cook in the oven for 15 minutes.
Take the tray out of the oven and carefully lift the paper out. Let the brownies cool for 20 minutes before cutting into squares.
