Coconut, Raspberry, Passion fruit & Mint Coolers

I’m a big fan of fresh coconut water, it just feels so hydrating and tastes amazing. My daughter is obsessed with anything icy so here’s a combination that suits us both - tasty, fruity and good for you. Thats our jam.

Ingredients

1 cup fresh young coconut water

1/3 cup raspberries, halved

1 passion fruit

1 handful small mint leaves

Method

In a jug combine the raspberries, coconut water and mint leaves. Scoop out the insides of the passion fruit and add that too.

Pour the mixture into ice lolly moulds and freeze for 2 hours.

Run warm water over the moulds to release.
