Fig & Nectarine Quinoa Bircher

This breakfast is so delicious and perfect for those on the go in the morning as the preparation is done the night before. I like to use coconut water fresh from the nut as I find it sweeter than the packaged variety but if you can’t find any maybe just add a little more of the sweetener and you’ll be good to go!

Ingredients

3/4 cup cooked and cooled quinoa

3 tbs chia seeds

1/2 cup coconut water

1/2 cup nut milk, see drinks within app

1 handful raisins

2 nectarines

1 fig

2 tbsp honey or maple syrup

4 tbsp flaked almonds

Method

In a bowl mix the quinoa, chia seeds, coconut water, nut milk and raisins. Stir, cover and place in the fridge overnight.

In the morning gently toast the almond flakes in a frying pan until they are golden.

Take the bircher out of the fridge, cut the nectarines and fig into wedges, drizzle them with the honey or syrup then and add those the bircher.

Divide between two bowls and top with flaked almonds.
