Hazelnut & Chocolate Bites

Chewy, sweet and ever so delicious. Make a batch of these and feel safe in the knowledge that when the oh-so-predictable need for some sugar takes your fancy you’ve got the perfect thing to satisfy.

Ingredients

1 cup hazelnuts 

1 tsp salt

1 cup gluten free rolled oats

1/2 cup hazelnut or almond butter

2 eggs

1 cup almond meal

1/3 cup honey

1/4 cup coconut oil, melted

120g refined sugar-free chocolate

 

Method

Pre heat oven to 180C.

Process or chop nuts until they reach coarse crumb.

Place them in a mixing bowl, crack in the eggs and add the rest of the ingredients except the chocolate. Stir well.

Chop the chocolate into small chunks and stir them into the mixture. 

Transfer the mixture to a tray lined with baking paper, press it down with your hands until it's even.

Place the tray in the oven and cook for 40-45 mins.

Once cooked, cool a little before slicing.
