Peach, prosciutto & Asparagus Salad

This is such a simple dish to create but it’s so big on flavour and texture. Plus it includes some of my favourite things so for me it’s a go to meal when I want to indulge myself without any guilt!

Ingredients

4 peaches

8 slices prosciutto

1 bunch asparagus

1 cup chopped radicchio lettuce

1 tbsp goats feta or cashew cheese (see condiments on app)

1/4 cup hazelnuts

1/4 lemon

1/3 tbs honey

sea salt

black pepper

macadamia or coconut oil

 

Method

Cut the peaches in half and remove the stones.

Heat 1 tbs of oil in a griddle or regular frying pan, place the peaches cut side down and cook for 4 minutes, turn them over and cook for another 3 minutes. Remove from the pan and set aside.

Chop the woody ends of the asparagus and add those to the pan along with the hazelnuts, cook for 5 minutes until just tender.

On a serving plate or board, arrange the peaches, asparagus, prosciutto and radicchio. Top with the nuts and dollops of cheese. Squeeze the lemon over it, drizzle the honey and season with salt and pepper.
