Yogurt Pops w/ granola & Berry Compote

I love the idea of having one of these for breakfast on a warm summers day and funnily enough my four year old is with me on this! She loves the different layers and textures that come with each lick and I can rest assured that she’s enjoying something delicious and healthy. 

You could use the apps granola or buy some from the store as I did with this recipe - if the pieces are quite big just chop it up a little before layering it in; it'll stick better this way. I hope you enjoy these as much as we do.

Ingredients

250g berries

350g coconut or natural yogurt 

1 lemon

7 tbs maple syrup

1 cup granola

 

Method

Place the berries in a saucepan along with 3 tbs maple syrup and the juice from the lemon. Bring to the boil then turn down to a simmer. Cook for 15 minutes, stirring occasionally, until the berries have reduced. Let the compote cool completely.

Stir 1 tablespoon of maple syrup in with the yogurt.

Mix the granola with the remaining maple syrup, then start layering the granola, yogurt and compote into ice lolly moulds. 

Place the moulds in the freezer for at least 2-3 hours.

When you want to eat them just run each mould under a warm tap for 30 seconds or so to release.
